Busy Busy Busy

Today I am helping the yellow house, green shutter lady paint her new swing. I offered to help because she has a rotator cuff problem and is recovering from shingles. She is very nice to our family and shared her most delicious Eggplant Parmesan with us last week. Her husband, who is retired, always brings in our garbage cans and watches out for our house.

So I think it’s only fair I help.

In the process of getting ready to go over at noon for my painting gig, I looked for some old clothes and shoes to wear. I looked and looked. Apparently in my last clothing purge, I got rid of all the clothing I wouldn’t mind splattering paint on.

This is amazing. I really had to look hard to find something to wear and what I came up with isn’t exactly ready for the trash bin, but is my least favorite cut off jeans and my least favorite tee, which is nice and soft but huge on me…

I guess I have done a good job of dumping clothes I don’t want or don’t like.

My current craving is for avocadoes. Anyone have a recipe using avocadoes that isn’t guacamole? I love da guac bigtime, but I’d like to branch out and find something else to do with them. Two years ago I wouldn’t have touched one with a ten foot pole, but tastes change.

Anyone buy Donald Fagan’s Morph the Cat album? If so, do you like it?

That’s it, going to finish up my coffee and get ready to paint!

she said it was good. i dont like avacado so i cant really help you.

Jackie is right - it was very yummy. :) You can dice up avocado and put it in salads and stuff like that too. The japanese place near me does an avocado salad - where they slice it into the shape of butterfly wings, and then use crab and salmon roe to form the body and then they drizzle wasabi mayo on it. YUMMY! If you go to my blog, there is a recipe for avocado ice cream. hehehe :)

Painting is fun. That's nice that you're helping your neighbor.

Avacadoes are one of my favorite fruits. I cut up a whole avacado eat it with a little salt and lots of lemon juice. Yumm.

I've not heard of the cat album yet.

I do not mind the actual painting... I hate the taping up and then the cleaning up of the brushes, rollers, brushes, paint roller pans, etc...

So that is why I avoid the whole painting thing...and hire people.

(At least that is my excuse and I am sticking with it!)

Also - there can never be enough guacamole! We order Mexican from this tiny little Mom and Pop shop (they make everything fresh at the time of the order... amazing!). We would have that 7 days a week, if not for my need and desire to have meatloaf at least once a week!

I've got a lovely recipe for a brown rice and chicken dish that includes avacadoes. Tres yummy. (actually, that should probably be mucho since it's a very spanish/southwest sorta dish):
1. cook the rice (i do it for about 4 servings, but you can actually get away with about 8) and refrigerate it until cold
2. Peel the avacado and cut lengthwise into 1/2 inch strips. Coat with lemon juice and also refrigerate until chilled.
3. In a large mixing bowl combine 4 chopped scalions, 12 sliced pitted black olives (I omit these cause I don't like olives), 3 c. boiled chicken cut to bite-sized pieces and the rice. Toss gently until mixed.
4. In a small bowl, mix 1/4 c. red wine vinegar, 2 tsp Dijon mustard, 1/2 c. vegetable oil, 1/2 tsp sugar and 1 Tbs chopped parsley. Whisk together vigorously until completely combined.
5. Just before serving, add the avacado slices to the chicken and rice mixture, pour on the dressing and toss gently.
6. Garnish with toasted pine nuts or sliced almonds and cherry (or grape) tomatoes.
YUM!

Veggie melts are also good with avacado. You can use any combo of veggies - whatever you have around and whatever your preference indicates. I tend to like shaved carrots with yellow squash, avacado, and bean sprouts, on a bed of spinach on wheat toast with melted muenster cheese on top and just a splash of thousand island dressing.

Painting can be fun. It can also be backbreaking, but as long as someone else is there it's more likely to be fun.

Ilanna, I don't know about avocado icecream...I might not be that evolved yet...;-)

JDJ...there was no taping...since this is an outdoor swing we just covered the wooden seat which she wants to keep natural and then took these little rollers and painted away. It looks pretty good, I'd say another coat but they're happy the way it is...Mexican food rocks! Lucky you to have a place nearby that's really good. We don't have that yet.

Echrai...do you know people come to MY blog just looking for YOU? This recipe sounds great so I'm copying it and printing it out for my files. Thanks honey!

Today painting was fun and I had the warm fuzzy feeling because I helped someone too...

We also had a few beers, ice cold, after the job was done and that's a nice reward!

Drinking beer after a day of labor is always such a nice reward.

I have a recipe for tortellini/avacado soup, but have never made it. it's South American recipe and it's always sounded good. Avacodos are a perfect food. They are packed with lot's of great things for your body. I'll find the recipe.

MMM avocado! LOVE avocado!

My favorite way to have it is in a salad. Basically you slice compari tomatoes, avocado and red onion, and drizzle with your favorite balsamic vinegar, and then drizzle a little bit of your favorite light olive oil. Sometimes I add cucumbers and a little grated sharp cheddar or crumbled gorgonzola.

Also, my grandmother used to make this amazing salad with TONS of avocado, small shelled & cooked shrimp, chopped cabbage, chilled green beans (that have previously been blanched and then lightly sauteed with garlic), on a bed of green lettuce.

Make a dressing of mayonnaise, lemon juice, a pinch of salt, a pinch of sugar and fresh ground pepper to taste. Her dressing was sour and light in the most perfect way.

Then toss the ingredients together lightly and chill on beds of lettuce until cool.

Sometimes she served chilled sliced grilled salmon, steak or chicken on the side.
